Had my yearly visit with the sleep doctor (I have sleep apnea and use a CPAP) and he said that because I’d lost so much weight that he was going to schedule me for a new sleep test. This will be to determine what effect the weight loss has had on my sleep apnea, and to see if I can come down some in pressure on my CPAP machine. The long term goal is to get rid of the CPAP completely, but that is still a ways off.

Awesome! My guy uses a cpap, too, and it’s a wonderful thing – and I know that other friends who’ve lost weight have changed pressure and eventually not needed the machine at all. Here’s to good sleep!

After my TGIFriday’s black bean burger debacle on Saturday, I made sure to have my usual 120 calorie black bean burger for lunch on Sunday. Not quite as good as the one from the restaurant, but about 1000 calories less.

Not weird at all! Good salad tastes great.

I find I often crave salad as viscerally as I crave chocolate or chips. Last night, I tore through three giant bowls of spinach (with avocado and grape tomatoes and soy-chik’n on top, but it’s the spinach that was important here) while moaning “OH YUM” and “THAT’S THE STUFF!”

Lately I’ve been trying to have a salad with my supper, and if I have soup for lunch I’ll have a salad with my soup.

One thing we’ve found that really makes a difference – if you buy bag o’ salad, or box o’ greens, we pack it in quart sized ziploc bags with a paper towel in the bag. This helps absorb any excess moisture, and keeps the lettuce fresher longer. My wife saw this on (she thinks) Good Eats, and that tip has saved us a lot of money.

I’ve found salad works wayyyy better for me when I don’t feel like I need to put the greens in. Greek salad with tomato, bell pepper, cucumbers and feta FTW. (Also olives and red onions, if you’re like that, which I am.)

Got up at 6am Saturday and 7am on Sunday to get my exercise in and do homework before the day really got started. I think I’ll make a habit of that; it was nice being pretty much done with the things I needed to do by 10am. Luckily getting up early isn’t that hard for me to do, so it wasn’t some great hardship. I can’t remember the last time I slept past 7am on a weekend anyway..

My on-campus class this semester is at an off-campus location, with only a few classrooms and a tiny parking lot, so I can’t park and walk to get in some extra steps like I did before. It was nice getting a little bit of a walk in before and after class, especially since I sit at a desk all day for work.

Today was the first day of my on-campus class for this semester, so I got my exercise in by parking quite a ways from the bookstore and walking there to get my books, and then walking back to my car. I wish there was a place I could walk safely near my house, because I think walking would probably be I’d enjoy doing.

Thanks. It’s a challenge going back to school at (almost) 50, but I need to be able to check off “College Degree” in order to really advance in my career. And considering that due to the recent economic turmoil I’ll probably be working into my 70s before I can retire, the extra income that will come from having a degree will be a big plus.

Was close on the calories, thanks to eating out for lunch. But we also walked around and shopped for about an hour, so that helped some. Made up for it by only having a salad for supper.

In other news, the last of the eggnog is gone from the stores, so I am no longer tempted by its sweet sweet goodness. I love eggnog, but it’s like a zillion calories a sip.
